The Austin-based taco chain of Torchy’s Tacos has arrived in Colorado, and we’ve gone so many times that we have tried almost everything on the menu. I LOVE the Migas breakfast taco- egg, green chile and then they mix in fried tortilla strips. SO GOOD. My husband is pretty consistent with The Democrat since their barbacoa is so so so good. We also love their queso- but realize that not everyone has a Torchy’s near their house like we do. I set out to re-create their queso at Casa Pura Vida- and it did a pretty “damn good” job! Here’s our copycat recipe for the queso dip from Torchy’s Tacos.
8 oz Velveeta cheese
4 oz evaporated milk (affiliate)
2 oz canned green chiles (affiliate)
1 tablespoon minced white onion
1 tablespoon minced cilantro
Hot sauce (affiliate) for garnish (optional)
Tortilla chips!(affiliate) (For dipping, of course)
Combine Velveeta, evaporated milk and green chiles in a microwave safe bowl. Microwave on half power, one minute at a time, stirring after each minute, until completely melted and combined. Transfer into dipping bowl, and garnish with onion, cilantro, and hot sauce. (We love to try all kinds of hot sauces- Tapatio, Cholula, and in this photo I used Melinda’s Habanero Sauce, (affiliate) and it was SUPER GOOD, we are eating it on everything now!) In true Torchy’s style, you can also drop a ball of guacamole into the center of the dip. Yum!
