Celebrate the solar eclipse with these adorable sugar cookies- easy recipe and instructions

We are SO EXCITED for the total eclipse coming up. We have talked about it, watched a trillion videos, and of course purchased our eclipse glasses. The only thing left is to celebrate with some fun recipes. Here is a simple recipe for solar eclipse cookies that are delicious and simple to make.

I’m not going to lie- we are geeking out about the eclipse. My grandparents’ farm near Cortland, Nebraska is one of the most perfect spots ever to view the totality, and so we are heading out for a four day long, multi-generational eclipse party and family reunion.

I wanted to preview the solar eclipse my kids by using something fun for them to do, and so decided to whip up these adorable solar eclipse cookies. We had a nice time decorating them, and they are super delicious too. I made the cookies from scratch, but then realized that the pre-packaged cookie dough sold in stores is already in a circle, so making these would have been even easier with those. Any way to slice it (haha!) these cookies are super fun and easy to make.

Solar Eclipse Sugar Cookies

Yield- About 36 cookies

Ingredients

I used Better Homes and Gardens’ Sugar Cookie Cutout Recipe to make the cookies- you could also use the pre-made dough in the refrigerated section of the grocery store. I cut out the cookies using an upside down Mason jar, or any circle size will do.

buttercream frosting recipe

Frosting

  • 1 stick unsalted butter, softened
  • 4 cups powdered sugar
  • 5 TB milk
  • 1 tsp vanilla
  • yellow food coloring
  • black food coloring, or add 4-5 Tb cocoa powder to the frosting

Instructions

Beat butter on medium speed until it’s nice and smooth. Gradually add 1 cup of the powdered sugar, beating until fully combined. While mixer is on medium, add the milk and vanilla. Gradually add in cocoa powder (if using) and the rest of the sugar, until desired consistency is reached.

I divided the frosting into two parts, and added the coloring separately. I used the mixer to get an even color, and I did the yellow first. That way, I didn’t have the clean the mixing bowl again for the black.

Decorate the cookies into the desired number of stages of the eclipse, and enjoy!
