It’s no secret that I love to eat soups year round! This Instant Pot Sausage and White Bean Soup is one of our family favorites! I love to create soup combinations using just the ingredients I already have on hand, and I often keep sausage in the freezer to make our Paleo Sausage, Sweet Potato, and Apple Foil Grill packet. Recently, this slow cooker Sausage and White Bean Soup from Damn Delicious has often been a hit at our house. I’ve modified the recipe for the Instant Pot, and it is delicious!

The broth in this soup is super delicious and hearty- I can be found slurping it over the kitchen sink as I serve dinner to the rest of the family. There’s just such depth to it- the spices give it layers and layers of flavor, and browning the sausage first adds even more salty goodness to the soup. I also love using dried beans because they are so much cheaper than canned, and in the Instant Pot, they don’t even need to be soaked. Super simple!

 

Slow Cooker Sausage and White Bean Soup Recipe

Instant Pot Sausage and White Bean Soup Recipe

Yield- About 6 large bowls

  • 1 tablespoon olive oil
  • 1 (12.8-ounce) package sausage
  • 3 cloves crushed garlic
  • 1 onion, diced
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 pound dry Great Northern beans, drained and rinsed
  • 1/2 teaspoon dried oregano
  • 2 bay leaves
  • 32 ounces chicken broth
  • Salt and black pepper, to taste
  • 3 cups baby spinach

Instructions

Pour the olive oil into the bottom of the Instant Pot and add the garlic, onion, carrots, and celery. SAute on high for about 3 minutes. Add the sausage, and cook until brown.

Pour in about 32 ounces cups of chicken stock and then water up to about the 4L mark on the Instant Pot. I add the beans and spices at this point, and then stir. If you are using tomatoes or other veggies (except spinach) you can add them as well. Then seal up the Instant Pot.

You can really add or subtract any vegetable to the recipe- we love to add spinach, kale, carrots, red peppers, broccoli, corn, or tomatoes. Whatever I have on hand at the time goes in the pot, and I’ve never had a bad combination.

I pressure cooked this on high for 35 minutes and it turned out awesome. I don’t think it matters how you release the pressure either. When I do add spinach to this recipe, I add it as the soup is warming in the Instant Pot- that way the spinach wilts but doesn’t overcook.

We serve this with fresh French bread or a salad (like our Brussels sprouts salad). It’s a super filling soup given the high fiber and protein of the beans.

Note- if you don’t have an Instant Pot, you can slow cook this soup for about 8 hours on low.
