My husband and I switched up New Year’s Eve this year. We have traditionally gone to a big, all-night party with our Costa Rican friends. Dancing, awesome Latin food and lots of laughter. This year, our hearts just were not in it.
We have two small children and it was freezing outside. The party is 45 minutes away from our house via highway- and we didn’t want to take our girls. So we decided to head to my hometown of Fort Collins and hang out with my parents. While the girls ate with grandma and grandpa, husband and I snuck out to dinner at the Bonefish Grill.
I’d never eaten there, but we had this phenomenal scallops dish with a sweet and spicy glaze. It was mind-blowing- and so of course I went home and spent January 1 replicating the sauce. It’s a nice combination of sweet with a bit of spice- and not too acidic. I’ve already eaten it on grilled chicken, slow cooker pork tenderloin and scallops. I hope you enjoy it as much as I do!
Easy Balsamic Glaze Recipe
- 1/2 cup brown sugar
- 2 Tablespoons cornstarch plus 1 teaspoon cornstarch
- ½ cup balsamic vinegar
- 1 cup water
- 4 Tablespoons soy sauce
- 2 tablespoons white vinegar
- 2 tablespoons chili paste sriacha sauce or red pepper flakes
- Combine ingredients in a small saucepan. Heat over medium heat until the sauce thickens, stirring occasionally. Remove from heat. To serve, either glaze over the meat before serving or place in a serving dish on the table during the meal.
