Costa Rica in the FIFA World Cup
It’s our absolute favorite time of the year here at Casa Pura Vida– time for the FIFA World Cup to begin! As a Costa Rican-American family, we are both heartbroken that the United States did not make the tournament this year, and incredibly excited to see Costa Rica compete in Russia. Last FIFA World Cup, Costa Rica made it to the quarter finals (thanks in part to our phenomenal goal keeper Keylor Navas) and it was the furthest any Costa Rican team had ever made it in the FIFA World Cup. Nos tiramos pa’ la calle para celebrar!
Since we’ve been in Costa Rica for the last five FIFA World Cup tournaments, we are a bit sad that we won’t be watching the games in Costa Rica. Celebrating soccer is the absolute biggest deal in Costa Rica- often times work and school is cancelled on game days, liquor laws are changed in the event that games start outside of normal vending hours, and EVERYONE wears the red white and blue to cheer on the team. Talk about pura vida!
The Ultimate Watch Party
Luckily, we have lots of expat Costa Rican friends living nearby, and even more soccer fans that love to watch the games in a big group. I’m gearing up to host quite a few watch parties, and that means lots of cooking and planning ahead so I can enjoy the game once it starts. Since the games are at odd times this year, I’m sticking to a nice spread of simple appetizers- or bocas as we call them in Costa Rica.
What Is Queso Fundido?
I thought it would be fun to do a baked vegetarian queso fundido recipe this year- the traditional queso fundido has chorizo, and we have several vegetarian guests coming. So I ran over to Target for my ingredients since they carry so many of the Latin flavors that we know and love. Plus, I love to shop at Target because I can find both the ingredients for a party, and the decor! I even bought my first cast iron skillet on this Target run- and I am obsessed. I also grabbed some super fun Coca-Cola® drinks with special Share A Coke packaging in FIFA World Cup theme. They had fun sayings like team, fans, friends, etc. and you can sip and scan to win amazing prizes! Here’s my haul:
How To Make Baked Vegetarian Queso Fundido
The easy baked queso fundido is ready in less than 20 minutes- and the prep time only about 5 minutes. I just put some olive oil in the pan, sautéed the onions and garlic and salt. While that was cooking up, I shredded all the cheeses and put them in the pan! So easy!
While the queso fundido I enjoyed making these fun trophy and #1 cheeses using cookie cutters- and my kids loved eating them!
What To Serve With Queso Fundido
I couldn’t help but make my two favorite homemade salsas- salsa verde cremosa and my traditional spicy tomato version. These were absolutely delicious when I put them on top of the queso fundido and rolled them up in a warm tortilla. In Costa Rica, we call this a gallo de queso- ¡demasiado rico!
Once the queso came out of the oven it was GAME ON- listos para la fiesta! I garnished with a few jalapeño slices for fun and put everything on the table near the game so that we wouldn’t miss a thing. Lots of ice cold Coca-Cola in a few varieties for every tastebud- Coca-Cola Classic, Coca-Cola® Zero Sugar and Coca-Cola Life®. (By the way- have you tried Coca-Cola Life® yet? I love the flavor!) Add some fun soccer themed plates, napkins, glasses and of course country flags- perfect FIFA World Cup soccer party!

Easy Baked Vegetarian Queso Fundido
- 1-2 tablespoons olive oil
- 3 tablespoons chopped onion
- 1 clove garlic pressed
- 1 tablespoon salt
- 2 C shredded Monterrey Jack cheese
- 1 package Oaxacan cheese or may substitute shredded mozzarella
- Jalapeno slices for serving optional
Preheat oven to 425F. Heat olive oil over medium heat in a 10 inch iron skillet until skillet is warm. Finely chop onion and press garlic, add to the pan and sauté until fragrant, then remove from heat. Grate the mozzarella cheese and pull apart the Oaxacan cheese and add to the skillet. Mix well and put into the oven. Bake until cheese is melted, bubbling and golden on top, or about 15 minutes. Serve hot- with warm flour or corn tortillas.
