Chiverre jam is a food product unique to Costa Rica- and once you try it you’ll see what all the fuss is about. The squash iteself is sort of a cross between a pumpkin and butternut squash, and can grow to be over 20 lbs in size. The insides are extracted and boiled with freshly made brown cane sugar until the marmalade forms- known as miel de chiverre in Costa Rica.
This product is used to make empanadas de chiverre. It’s also amazing on crackers on its own or accompanied with some fresh goat cheese. Can be used as a sweetener in your coffee or tea, a cupcake filling, or even as the layers in a tiered yellow cake.
For those making empanadas, each jar will make one batch of empanadas with about 1/4 of the jar leftover for snacking.
