As the days get shorter and shorter, I feel like it gets harder and harder to get out of bed on time. Which often means that I am rushing through our morning routine- and if I’m not careful, I don’t get breakfast. Since I’ve been working on eating a vegan breakfast, I started to look for quick, healthy vegan breakfast ideas- and discovered overnight oats!

Overnight oats are awesome because I can make them the night before (during dinner cleanup is ideal for me). Then, they sit on the refrigerator and get all gooey and perfect for me to eat, hot or cold, in the morning- right in the container I made them in. Since I am mourning the loss of summer, I made this recipe reminiscent of some of my favorite flavors from Latin America by adding mangos and chia seeds.

This simple vegan overnight oats recipe has a bit of Latin flavor with the addition of fresh mango and chia seeds- and only 4 ingredients!

Instructions

In a bowl, mix the oatmeal and 1 cup of Silk® Unsweetened Vanilla Almondmilk and set aside. In a small bowl, mix the chia seeds and 4 TBSP Silk® Unsweetened Vanilla Almondmilk and set aside. You can peel and slice your mango into bite sized pieces. Or, if you can’t find a good, ripe mango, you can also buy canned mango (I found it at Walmart with my other ingredients) and slice it, which is what I did for this recipe.

In your glass canning jar, layer oats, chia seed mixture and mango until full. I saved a few mango chunks to add to the top as a fun surprise when I open the jar in the morning. Seal the jar up tight and place in fridge- the Mango Chia Overnight Oats need about 6 hours to fully “cook”- and they are yummy for up to 24 hours.

    Is overnight oats supposed to be eaten cold? Or do you warm it up?

      Hey Kathleen- thanks for visiting! I think a lot of people eat them cold. That is not my favorite- the texture makes me shiver. So I heat them up before eating them. XO ~Christa
