Honey Carrot Recipe

Eating our veggies is super important- and it can get hard to get our kids to buy in to the idea. I generally serve one or two vegetable sides with our dinner main dish, and as my daughters get older it is getting harder to predict which veggies they will eat, and which will be promptly rejected. This honey carrot recipe has been a hit time and time again at Casa Pura Vida, and they are so simple to make. I usually start them first so they can boil while I cook the rest of the meal. I hope you love these honey carrots as much as we do!


  • 1/2 to 3/4 lb carrots, cut into circles
  • 1 TB butter
  • 2 TB honey (affiliate)
  • 1/4 C orange juice (optional)


Wash and cut the carrots into circles. Place the carrots in a large sauce pan  (affiliate) and generously cover with water. Bring to a boil over medium high heat and cook until tender. Drain carrots, and stir in butter and honey. You can also glaze with orange juice or add walnuts (affiliate) . Serve warm.
