One of the most timeless breakfast dishes throughout Latin America and the United States is avocado toast. It’s a perfect blend of nutrition and sabor —not to mention quick and easy. I’ve teamed up with Avocados From Mexico to share my Chimichurri and Avocado Toast recipe.

Avocado Toast With Salsa

In Costa Rica, we slather chimichurri on almost anything- from using it as a salad dressing, putting it on top of freshly grilled steak to eating it with chicharrón. The combination of tomato, onion, cilantro and lime with just the perfect sprinkle of sea salt adds a kick to almost any dish. When you add a perfectly ripened Avocado From Mexico —well, you can’t really go wrong with this dish!

Avocados de Mexico on Toast With Chimichurri

Contrary to popular belief, Costa Rican food is not spicy, and this chimichurri salsa is no exception. The blend of freshly sliced vegetables lightens up any meal. Plus—the colors! This dish is just so beautiful with the layers of greens and reds found naturally in the ingredients. Here’s the simple recipe to recreate a Costa Rican-style avocado toast with chimichurri salsa.

Chimichurri Salsa on Avocado Toast

AVOCADO TOAST WITH CHIMICHURRI RECIPE

Yield; 6 slices

Ingredients for Costa Rican Chimichurri Salsa and Avocado Toast

INGREDIENTS

  • 2 ripe Avocados From Mexico
  • 4 slices of bread (we love Bimbo® Bread)
  • 2 large hothouse tomatoes
  • 1 small white onion
  • 1 bunch cilantro
  • 2-3 limes
  • 1 teaspoon sea salt

DIRECTIONS

Finely dice the onion and chop the tomatoes into uniform chunks/cubes. Half the fun of eating the chimichurri is how beautiful it looks on the plate —and that starts with slicing the vegetables into uniform pieces.

Chopped Vegetables for Costa Rican Chimichurri and Avocado Toast

Remove the leaves from the cilantro and chop into medium-sized pieces. Juice the limes. Combine all ingredients in a small bowl and add salt to taste. Note —chimichurri is also delicious after a day in the refrigerator —store in an airtight container.

To prepare the toast, cut the avocados into slices and toast the bread as desired.

Sliced Avocados de Mexico

Place the avocado slices on the toast and lightly salt and pepper.
